To Cook - Pink Soup


Never ever ever thought about mixing up beets with coconut milk and avocado,
but damn it works!!

got the recipe from one of my favorite new foodblog discoveries,



This is the recipe

Pink Soup with Roasted Onions and Broccoli
2-3 small to medium beets – peeled and cubed
2 garlic cloves – minced
sea salt
2 small to medium red onions – peeled and quartered or cut into eighths, depending on size
grape seed oil
1 head of broccoli – cut into bite-sized florets
2 cans Thai coconut milk
pinch of chili powder or a dash of cayenne
1/2 lemon – juiced
1-2 ripe but firm avocados
freshly ground black pepper
arugula leaves for garnish

1. Add beets to a medium-sized saucepan along with the garlic and a pinch of salt and barely cover with water. Bring to a boil, lower the heat and simmer until beets are tender.
2. Meanwhile, preheat the oven to 350F (180 C). Place onions on an oiled baking sheet, lightly brush with oil and roast until golden, for about 20 minutes.
3. While waiting for the beets and onions to cook, bring a large pot of well-salted water to a boil and blanch the broccoli for 3 minutes. Immediately transfer into an ice-water bath to stop the cooking.
4. When the beets are tender, add in coconut milk and a pinch of salt, bring to a gentle boil and simmer for 3 minutes. Add in the broccoli, stir to heat it through and then remove from the heat. Squeeze lemon juice over the soup and adjust salt if needed.
5. Cube the avocado. Ladle the soup into bowls and top with roasted onion wedges, avocado cubes and arugula leaves. Serve with sourdough and/or sprouted bread avocado toasts.

Krachtvoer - the aftermath

Here are some impressions from Krachtvoer passed weekend...

It was such a great event.

After having an incredible breakfast experience organized by Otark productions and Villanella
( think small white linnen covered tables, with food that was served in sync with the movie, rum shots, dumplings filled with berries, potato pancakes, leaf shaped chocolate,...)

 I listened to some great 'inspiration' speeches by Corazon de Raeymaeker ( grondsmaak boerderij), Kobe Deramaults from In de Wulf restaurant and journalist Dorien Knokaert who had very interesting stories behind their food-journey.

Up next, to the market with food stalls from chocolate to waffles to what food to eat for your health to homemade pumpkin, beets,... marmelade.

Downstairs, was probably the pop up in the prettiest location.. filled with pretty cakes from Tinsel and drip coffee from the pretty well dressed barista from Normo

While eating your cake you could browse through the cook - food - selection from bookstore Paard Van Troje

To end with something I was eyeing since the moment I arrived!

Ice ice cream baby

I know it's Easter and easter chocolate eggs are all around,
but I am much more interested in these!!

Spotted these at the Bio/ Nature shop the other day!
Have you seen the names and the flavors!
instant attraction!

So for those of you who are intolerant to a lot of stuff and stayed clear of ice cream (dairy ect.)
no longer!!
Those days are over!

These are gluten / soy / lactose free and kosher

ok ok, it is this processed food, but seriously with flavors like these... who cares?

La Linda

I was completely taken away by a restaurant / bakery / lunch and breakfast thing called La Linda.

Uruguay isn't next door, and that the chances of someone traveling all the way over there are quite small..

It is a travel tip I just had to share,
even if it is just to drool over the pictures and imagine that you are there!
I mean look at the place! It is absolutely gorgeous!!
